So, I am trying to try new vegetables as well as new ways to prepare them. I tried a recipe from No Thanks to Cake and doctored it up a little to make it edible for me. The link below is to the original recipe for mashed cauliflower (mock potatoes).
In addition to what is listed here, I added 1/4 cup of shredded cheddar cheese and 1 tablespoon of soy sauce. I also seasoned it with cajun spice. I can't say I'm a big fan of cauliflower but, I was able to eat this. If you're a fan of cauliflower or cheesy mashed potatoes you might enjoy this
