Week 7 already?

Wow! I can't believe I am already in my 7th week... on the one hand it feels like there's no possible way I'm almost 2 months in and on the other hand, some days seem to drag on forever. I lost another 2 pounds during week 6. I can't wait to see what's in store this week. I feel so much more in control of my actions. I don't lust after food anymore. I may still drool a little but that's a different story, haha! Tonight was wonderful! For the first time in years I decided to walk around uptown W

Week 5

Another loss! Down 4 pounds this week. I now weigh 248.6 I really surprised myself. I had two days where I had to make big choices so that I could still participate with my co-workers. I made good choices and have been really following through with my work-out goals. I'm not going work-out crazy any means but little by little regaining my endurance. I had an amazingly awesome and cruel dream. I dreamt that when I went to my Jenny centre they took me into their food storage area. Along each aisle

Trying new Veggies - Mashed Cauliflower

So, I am trying to try new vegetables as well as new ways to prepare them. I tried a recipe from No Thanks to Cake and doctored it up a little to make it edible for me. The link below is to the original recipe for mashed cauliflower (mock potatoes). http://www.nothankst...ashed-potatoes/ In addition to what is listed here, I added 1/4 cup of shredded cheddar cheese and 1 tablespoon of soy sauce. I also seasoned it with cajun spice. I can't say I'm a big fan of cauliflower but, I was able to ea

Week 4 Weigh In (a few days late)

So yay! I was really worried about this week ... I guess I'm just being paranoid that I'm not following everything like I should or that my body is going to suddenly reject what I've been doing... oh, have I mentioned the chipotle dreams? I think I have, haha. I did eat Chipotle this week when we had a staff meeting. I felt good about it because I revised my normal bowl. I chose between corn or beans and sour cream or cheese. I also went with a small amount of brown rice and a single serving of

Anticipation!!

I am getting super amped to get measured on Wednesday. This week held a lot of, not so much temptation, but obstacles. It was a little hard to stick to my plan because I had two huge family social events. The first day I was a little bit more lax since I didn't have a microwave handy but, honestly, it helped me to keep my act together at the second event. Regardless, I put on a pair of pants this weekend that was a size 22 (not stretchy!) instead of a 26. I am much more excited this week about

GAH! Can't upload my Photos!

GAHHHH!! I tried so long and hard to upload some of my early before and after photos to a thread in the forum but I was not having any luck. So I thought I would make a blog entry and then see if I can just link it to the thread. The first picture with my husband in the background was taken on 9/22/12 when I was just a week and a half into the plan. The second picture with my daughter was on 9/28/12, in the midst of week three. The last picture was taken today (10/7/12) in the middle of week 4.

Man VS. Food

I am living vicariously through Adam Richman, the host of the Travel Channel's Man vs. Food... He's in Miami in this repeat episode and he's eating cubans, hot dogs, and a GINORMOUS steak.... drool. I know no one should attempt the portions of these food challenges but oh man, it looks extremely delicious. We had an episode of man vs. food filmed in my hometown Columbus, OH and this show has been my guilty pleasure for quite some time. Following my c-section I was on a strict diet until I could

Graphing Progress

So, I just discovered that under the tools section they have a space where you can graph your personal progress, I chose to graph my weight and bmi ... they also have measurements and body fat % and cholesterol. I had been meaning to make my own graph. I'm used to keeping and graphing a ton of statistics at work but I never got around to it. This is much easier anyway because I can just add on to each week and I don't need to keep track of any paper. I love seeing it go down, down, down!

Week 3 Weigh-In

I was a little worried about my weigh-in this week. I didn't feel that I accomplished the goals I had set for myself this week. I didn't get out and walk enough for multiple different reasons. I also had two days where I was faced with unexpected food choices. The first was Friday when we had an office pot luck at work. Someone had planned to make beef vegetable soup to bring so I was thought, "Great, that will be my go to" ... well she ended up making carmel apple pizza instead... um?? I hadn'

Craving Niger

So, I am REALLY craving Niger (in so many ways). I miss my little village, Kollo, where each night I would go to my neighbors house to eat dinner together. Three to four girls all seated, indian style, around a platter of rice and beans, rice and sauce, or maca(roni) with sauce. Starch, starch, starch ... but I was also walking and biking more than 10km each day. My village was so amazing. I don't miss the litter all over and the human and animal deification on all paths ... I miss the smiling f

Worth the Dough

My friend, who is very similar to me, was over visiting this weekend and we got into a bit of discussion about weight struggles. It all started when she weighed herself on my scale and couldn't quite comprehend the number flashing under her toes. She started taking off her shoes, unloading her pockets, anything to match the number from the last time she had weighed herself. I can understand how it feels to just keep see the numbers adding up until you begin to ask yourself how did I get to this

Dreams of Chipotle

I LOVE CHIPOTLE... The only restaurant I actually miss is Chipotle. When I was in Niger and the closest Chipotle was over 3,000 miles away, I would have vivid dreams of swimming in olympic pool sized burrito bols. I loved me some steak burrito bols... But, I've been strong. Last night I even went to Chipotle on the way home from a friend's house to buy my husband a burrito before he went to work since I didn't have time to make him something else. I thought I would be more tempted to just get my

Week 2 Weigh-In

So excited! I lost another 5 lbs. this week, on the dot. So, I have officially lost 13.8 in my first two weeks on the program. In my first entry, I talked about how nervous I felt in how I might feel if I only saw 1-2 lbs. (even though I know this is the "normal" amount to lose weekly). But I am very satisfied with this week's accomplishment. The biggest lesson I learned this week is to not be so eager to get on the scale all the time. That just adds stress that is not needed. I just need to fe

Guilt All Around - How to Deal

I said "until next week" in my last entry but what I should have said was, "until I get home and have more time to concentrate on what I'm writing" ... I forgot how much I love to blog! I had one while I was in the Peace Corps (http://salutniger.blogspot.com) but due to the lack of internet I mostly journaled. I miss journaling a lot but I like the interactive opportunities that blogging offers. I've been feeling guilty for a variety of reasons this week although thankfully none of the guilt has

A Lot to Live Up To

I have been back in America just over two years now and I have been just itching to go "home" for a visit. I spent 2008-2010 in Niger, West Africa and it changed my life. I was just graduated from college and full of energy and zest, thinking I could change the world. Well, my world changed. In the span of two years I lost all the weight that I had always been self conscious about, I met a multitude of people, and upon the completion of my service I got married to a local man and moved back to A
