Veggies!

Ever since I was very young I have been a really fussy eater... especially in the vegetable department.

Ive been a fairly strictly starchy veggies only kinda gal... in the past few years i have grown to LOVE cucumber, broccoli, spaghetti squash and celery...omg i love celery.

The other day (thanks to Jenny) i tried green beans for the first time.. and i actually really liked them to my surprise... So I got to thinking.. maybe there are other veggies out there that i havent tried that i will love...

So, this coming week I am challenging myself to try cauliflower, beets and rutabaga...

What are your favorite (non starchy) veggies, and your fave ways to eat them? Do you eat the same rotation of veggies, or do you mix it up and try new things?

I love to sauté asparagus , onion, mushrooms and garlic with a bit of olive oil. Then dump the JC pasta dinners on top.

I also decided to try new veggies, a new one each week or so: Brussels sprouts( my absolute favorite now!), eggplant, spaghetti squash, rutabaga, asparagus...roasting with olive oil spray and rosemary, thyme and basil ( except for the spaghetti squash which I nuked in the microwave---so easy!). Just this week I tried " carrot fries" and roasted cauliflower and loved them both. I make sure I always have roasted veggies in the refrigerator ready to eat!

Having my veggies ready is like having my grocery shopping done for my other items, you gotta be organized and then this whole thing runs pretty smoothly, does for me anyway.

I don't love to cook. But a few veggies I love are canned beets and artichoke hearts or hearts of palm packed in water. All are filling, tasty and easy to have in your house!

I tend to cook my veggies in the microwave - I buy frozen veggies mostly.

I LOVE brussel sprouts, squash, and carrots :)

Personally, I try to mix up my veggies. It makes me feel like I'm having a variety of meals because of the mixture of entrees and veggies.

I love brussel sprouts and spinach. OMG SPINACH I put on EVERYTHINGGGGGG. I buy the frozen spinach because it's much easier to just throw on top of the jenny food while it's microwaving.

I also add sundried tomatoes and canned artichoke hearts to a lot of my jenny pasta dishes.

Brussels sprouts are a must! Wash them, trim the ends (and I cut them in half but you don't have to) and I toss them with a little olive oil (but could also use Pam spray), salt, pepper and cayenne, then roast at 375 for about 40 minutes or do, shaking the pan and tossing 1/2 way through. SOOO good - and the leaves that fall off and get all crispy are the best!

I also roasted turnips the same way for the first time and they were amazing!!! Just peeled and cut in the shape of fries. Yum!

spaghetti squash is something i really like and have not had as of late, now that i am thinking of it i am going to have to get some this week and cook that baby up!
