Holiday Hacks – Salisbury Shepherd’s Pie

Ingredients:  1 package Jenny Craig Cheddar Cheese Crisps (crumbled) Jenny Craig Salisbury Steak 1 cup cauliflower  2 tablespoons low sodium chicken broth  1/8 teaspoon garlic powder  1/8 teaspoon salt  1/8 teaspoon pepper  2 tablespoons of diced onions  5 mushrooms (diced)  ½ cup mixed frozen vegetables (thawed) ¼ teaspoon dried sage ¼ teaspoon dried rosemary ¼ teaspoon dried thyme 1 teaspoon ketchup  ½ teaspoon Worcestershire sauce  ¼ cup low sodium chicken broth  ½ teaspoon parsley  Nonstick cooking spray Instructions:  Microwave Jenny Craig Salisbury Steak for 3 minutes.  In a bowl, mix 1 cup of cauliflower with potatoes from entrée. Cover with plastic wrap and microwave for 5 minutes or until tender.  Mash cauliflower and potatoes with 2 tablespoons of chicken broth and 1/8 teaspoon each of garlic powder, salt, and pepper. Set aside.  Crumble Salisbury Steak with a fork. Place in a pan sprayed lightly with nonstick cooking spray. Add diced onions, mushrooms, thawed vegetables, dried sage, rosemary, and thyme, ketchup, Worcestershire sauce, ¼ cup chicken broth, and vegetables from entrée.  Sauté for 5 minutes. Place filling into a 6” ramekin.  Top with cauliflower mash. Sprinkle with crumbled Jenny Craig Cheddar Cheese Crisps and ½ teaspoon of parsley.  Broil on low for approximately 2 minutes or until top is golden.  Enjoy!    If you are on the Jenny Craig program, use the guide below when considering your other meals for the day. Simply Inspired: Chicken Marsala with Zoodles

Dress up our delicious Chicken Marsala with some fresh and free additions, placed on top a bed of yellow squash zoodles for a satisfying meal.   Ingredients 1 prepared Jenny Craig Chicken Marsala 1/3 cup tomatoes (diced) 1/3 cup red onion (diced) ½ cup squash (spiralized) Green scallions Lemon zest Ground pepper Fresh parsley chopped Instructions Create your zoodle base by sautéing your tomatoes, onion, and squash until soft. While cooking, season with the lemon and pepper. Top with the prepared Jenny Craig Chicken Marsala Garnish with green onions and chopped parsley and enjoy!

Holiday Hacks – Cocoa Bites

A serving of our Bewitching Cocoa Bites is the perfect treat without any unhealthy tricks. Try this tasty recipe and send us a picture of your creations! #HolidayHacks Ingredients: 5 cups of rice crisp cereal  6 tablespoons butter  3 cups mini marshmallows  10 oz. package of peanut butter and milk chocolate morsels  1/3 cup cocoa powder  1/3 cup light corn syrup Instructions: Measure 5 cups of rice crisp cereal, set aside.  Melt 6 tablespoons of butter in a large saucepan over low heat.  Add 3 cups of mini marshmallows, a 10 oz. package of peanut butter and milk chocolate morsels, and 1/3 cup of cocoa powder.  Cook over low heat, stirring constantly, until marshmallows and morsels are melted. Remove from heat. Stir in 1/3 cup of light corn syrup.  Add cereal, stir until well coated.  Shape mixture into 1 ½” balls and place on a cookie sheet.  Cool completely.  Store in a cool, dry place. Simply Inspired Roasted Veggie Pizza

Bursting with color and flavor these roasted veggies brighten our Margherita Pizza with a new set of fresh textures, just in time for summer!     Ingredients: 1/4 cup of yellow peppers sliced 1/4 cup of portabella mushrooms sliced 1/4 cup of zucchini sliced 3-4 slices of red onion Pinch of ground pepper Jenny Craig Margherita Pizza Instructions: Preheat oven to 400 degrees. Chop veggies and season if desired. Roast veggies in oven for 15 minutes in greased pan. Prepare Jenny Craig Margherita Pizza as instructed on box. Layer the veggies on top of the pizza and enjoy!

Simply Inspired Peach and Caramelized Onion Pizza

We wanted to share our take on a popular flatbread favorite! Peppery arugula helps to balance the sweet caramelized onions and ripe purple figs layered on top of our Margherita Pizza! Ingredients:          1 prepared Jenny Craig Margherita Pizza           1 tbsp low-fat feta cheese           Arugula           Peach slices (grilled)           Caramelized onions Instructions: Caramelize your onions. Add oil to a large skillet over medium heat. Add in the onions with a pinch of salt and cook until golden brown. Grill your peach slices until soft. Layer on the arugula, onions, and peaches to the prepared Jenny Craig pizza. Top off with a sprinkle of feta cheese. Enjoy every delicious bite!

Simply Inspired Mint Berry Compote

A delicious addition to our Blueberry and Oats Square, this Mint Berry Compote topping will satisfy your sweet tooth and leave you wanting more!   Ingredients: -          1 Jenny Craig Blueberry and Oats Square -          ¼ cup cherries -          ¼ cup blueberries -          ¼ cup strawberries -          Chia seeds -          Cinnamon -          Fresh mint leaves Instructions: -          Chop the strawberries and combine in a saucepan with the blueberries and cherries. -          Stir over medium heat until they become a jam-like paste (about 10-12 minutes). -          Spread the berry compote on top of the Jenny Craig Blueberry and Oats Square -          Top with Chia seeds, cinnamon, and a fresh mint leaf. -          Serve and enjoy!
