Volumized Chicken Fajita

I know they are being discontinued but this is totally something that you can make on your own. 

 

I sliced mushrooms and added them to a small skillet with a spray of EVOO.  Shook some homemade taco seasoning on them and cooked up.  Added the contents of the chicken fajita pack (minus the peppers since I don't like them) then added some black beans.  I like black beans.  Lets roll with it.  If you don't like them, omit.  Squeezed half a lime overtop and added the seasoning packet.  I spooned a few spoons of pico juice overtop just for a little flavor. 

 

Cooked that up and put it on a plate.  Topped with pico.  At the same time I had the two tortillas in the oven at 450 to toast up.  Served them with a side of pico.  SO YUM!  Below is a pic.  And it's a full size big plate, not the smaller ones.

that looks delicious, i love the mushrooms in it!!!

Me too.  I love that the tortillas become chips for the pico.  Yesterday I did this with the Smart Ones Steak fajita and served it with some fire roasted smoked salsa that my husband made. SO GOOD!  Love his homemade salsa.  Ate the entire big bowl in a few days.

4 and I bought all of them.  LOL  My JCC said they were expecting more to come in their shipment that was coming in today.  I don't know what's up.  But she told me the stuff that was coming out Q4 and OMG I can't wait to try all of them.
