The other day I was on my way home and I REALLY wanted tortilla soup for dinner. Well, there's no tortilla soup on JCC so I remembered I had Southwestern chicken and rice in the cabinet so I mixed that with low sodium fat free chicken broth and voila! I had my black bean chips with it, and salsa, too. yum.
Last night I was dying for soup again so I took a can of mexican style chopped tomatoes, the same cx broth and heated it up, pureed it and got my soup fix. It was filling and satisfying.
Wonder what else I can turn into soup...

I too am a soupaholic, especially when it's cold out.
I actually just posted a recipe on volumizing the corn chowder to make green curry soup and also awhile back (under recipes) I made the fajitas into a sort of tortilla soup- hope you like it!
I also posted a free veggie soup recipe under recipes (sometimes I make it instead of salad for the week) and if you search for tuscan soup on the site JC came up with a free one, too. It's tomato based and I liked it, but I prefer a chicken broth base. Weight Watchers has 3 soup recipes on their site- search for zero point soups. It's a freebie for us, too!
Some others have posted that they use the baked potato and mash it and add it to broth as well and it makes a great soup. I have yet to try it, but I bet it's awesome!
I've been playing around into making a parmesan broth for the ravioli and making a soup, but I've not had success. I bet the ravioli would make a good soup, just haven't figured out a way yet!
