Gwen! I am so with you! The "goo" cheese is disgusting! The smell of it even makes me gag! I didn't even think to put a LC wedge in my omelette! I am so doing that next time!~ :)

It is awesome Kyra. I thought about putting some FF cheddar on it and when I opened the fridge I saw the LC and thought "Oh yea, this Queso goeson EVERYTHING!" lol And it does! I didn't realize how goo the cheese really was with the omelet because I've never let it defrost. Now I know and will always replace. I still can't believe how full it left me all morning. For lunch I made the potato soup and also added rutabaga to it. YUM!!!

My Dinner - Turkey Tacos

2 Old El Paso Stand N Stuff Soft Flour Tortillas (160 calories total)
1 C. Jimmy Dean Turkey Sausage Crumbles (140 calories)
1/4 C. Colby & Monterey Jack 2% milk shredded cheese (80 calories)
Salsa to taste (didn't count my calories here)

Total for 2 tacos = 380 calories

These taco shells were AWESOME! I have always preferred soft tacos and these shells are kidney shaped and stay standing on their own. I heated the meat as per the microwave directions and sprinkled with taco seasoning. I was all out of lettuce and next time I'll add sauteed onions and red peppers.

**The salsa bowl looks dirty but that's where I heated the meat... no use in dirtying another dish, right LOL

I wish I took a photo of my lunch today! I made a huge salad and added green verde salsa to it and topped it with the turkey chili. It was amazing! Gotta get some fat free sour cream for next time.

YUM!!!!!!!!!! Wish I'd have taken a pic of lunch. I had the turkey burger and added onion, mustard, and queso LCL cheese. A side of oven roasted broccoli and my morning orange. So yum!

OMG I love how creative and volumized the food gets. I am still eating straight out of the box. I need to get creative. I am only on week 2 but I am going to start thinking of some ideas. I am just not a veggie lover....what do I sautee mushrooms with ?? I don't want to make them all fatty with butter...i Used to use lots of butter and salt before.

Thanks for these ideas. They look incredible. My problem is that I am really not much of a cook and I have very little experience with veggies. One reason JC is easy is I can pop a meal in the microwave. I wish there was a similar deal with veggies. I do not like any of the frozen ones I have tried. I end up eating a lot of mini carrots! Is there a forum for ideas on how to prepare some veggie dishes-- sometimes I microwave asparagus with some sprinkles of "i can't believe its not butter" seasoning and it is good but not so exotic. I really like peppers, mushrooms and onions, carrots and asparagus. I dislike zucchini and squash.

tamkinz & sle3364. There are some great recipes and ideas at http://www.nothanktocake.com. Tamkinz, please try taking your food out of the container before you eat it. It helps a lot with seeing portion size on your plate and helps you to feel like you aren't eating frozen food everyday. You can saute your mushrooms in olive oil spray and/or I can't believe it's not butter spray. You can also use a tsp of olive oil and it will count as a limited free.

sle3364, I use the steamer bags of veggies. You throw the entire bag in the microwave and set the time. They are awesome! When they come out, I squeeze some fresh lemon juice on them and they are the best! A lot of people on the forums love roasted veggies too. My preference is still the steamer bags. I do roast some on occasion though. Be careful with the carrots, they have lots of sugar ;)
Another great tip, if you are eating any of the burgers or sandwiches, remove the bread before microwaving and put your bread in your toaster! It taste so much better this way! HTH

I am all about fresh veggies. I load up my cart with a TON of fresh veggies every week. Then when I get home I clean, chop, and prep all of them for the week. Even pre-bagging grapes into baggies. All snacks are portioned and ready to go. Makes it MUCH easier to eat healthy during the week. No wasted time and if you are in a hurry in the morning, it’s all done for you so there is no excuse as to why you can’t eat on plan.

I oven roast all my veggies. Expand what you eat. You may not have liked broccoli before but try spraying it with olive oil and adding some pepper, onion powder, and garlic powder. Oven roast at 450 for 25 minutes. Squirt a little lemon juice on top and there you go! If you want some ideas of how to cook a particular veggie, post and people will respond. It’s easier if we know exactly which one you are trying to make because each veg has a ton of different yummy ways to make it. Oh, and make it a point to try at least two new veggies a month until you work your way through all of them at the store. And try them all at least twice. You may have just cooked it badly the first time. You never know what you will come to love!
