Best Sauted Veggies

I finally found a delicious sauted vegetable recipe that I came up with on my own that I LOVED tonight. I could not put the fork down!! If anyone wants to try it you need the following:

1 eggplant cut into cubes
2 portabello mushrooms medium sliced
1 bag of steamed 10oz. broccoli
1 large tomato diced medium
3 cloves of fresh garlic sliced very thin
1 medium onion sliced very thin

After preparing all veggies as decribed above, spray a large frying pan with Pam 0 calorie spray over medium heat. Add the garlic and onion until brown. Add all vegetables and brown in garlic and onion, mixing frequently so the vegetables soak in the garlic and onion in medium heat until vegetables are tender.


So filling and so great :)

I'm not one of the ladies, but I'd love to share mine.

I take an onion and cut it up and then I caramelize the onion in a frying pan with a little olive oil and minced garlic.  I cook a bag or two of broccoli florets in the microwave (they are steamer bags).  Next I throw them in when the onions are brown with some salt, pepper, couple of cut up garlic cloves, some minced garlic and crushed red pepper. finish sauteing it and then serve with whatever you are eating.

Everyone in my house absolutely loves it and I make it twice a week.

I just discovered that my weight loss has slowed probably because I had gotten into the habit of 'roasting' my vegetables with olive oil. Because I cook them in large batches for freezing I was using a lot of olive oil. So now I'm on the hunt for lots of flavouring ideas to cook vegetables. The spray oil just doesn't work all that good but I heard squeezing a tomato for juice to cook vegetables in as well try a mixture of lite soya sauce and mustard. I'm going to try these ideas and maybe evolve them but my goal is to find recipes to flavour vegetables without oil and not be stuck with boring frozen or steamed vegetables. I would love all of your ideas so please bring them on and help this girl out!!!  :)
