Stuffed Peppers

I'm thinking of making stuffed peppers but wanted to try to make them as healthy as possible. Any suggestions?

I've never made stuffed peppers, but I think I would like them! I need to start volumizing with more Veggies ASAP!

I make vegetarian ones, I'm sure you could google some good recipes that use ground chicken or turkey instead of beef.

I made a stuffed pepper today for the first time! I've seen the recipe floating around on the forums before, and finally decided to try it. Took the Jenny "Southwestern Chicken w/ Rice" and used as a stuffing, topped with a dollop of salsa. Bake at 350 degrees for 30 min, covered. I put some FF cheddar on top halfway through and ate it with FF sour cream. SO FILLING!

It's really, really good. I'm sorry that I live too far from a center to just purchase the Southwestern Chicken and some of the other Jenny foods I really liked.

Well then make a list of your favorites and when I visit OC in May I can bring you some of them :)

OH MY GOD THAT SOUND SO DELICIOUS!!! I'm totally buying a pepper and doing that tomorrow! and possibly all next week! Oh my gosh.

You can saute some zucchini, onion, yellow squash and garlic and fill the peppers with that mixture. Add any seasonings or a little FF cheese on top. Substitute any veggies you have on hand. I make this all the time for my vegetarian daughter and it is a nice twist on standard rice stuffed peppers. I sprinkle a little boxed stuffing mix on top of hers for crunch (right out of the pouch in the box so it is still crunchy).
