BELLA'S CHICKEN TACO
Ingredients:
Chicken breast-approximately one per person
low sodium taco seasoning
low cal shredded cheddar
canned jalapenos
diced tomatoes
green chilis
diced peppers
salsa
no fat sour cream OR low fat no flavour yogurt
brown rice OR wild rice OR brown rice and wild rice
one head of lettuce (fresh)
To prepare:
dice chicken and cook with taco seasoning
steam rice
dice all remaining vegetables
Assembly:
take two or three whole lettuce leaves and stack together (use as taco shell)
add 2 tbls rice
add 3 oz of chicken
add 2 tbls of cheeze on top of chicken
add vegetables, salsa, and sour cream
312 Calories for one Taco, if your still hungry skip the chicken and cheese fill one up with veggies only and its still delicious and free!
