pleasantly surprised by the chicken and corn chowder

so, i avoided this food last time on the plan because i typically don't like 'white' soup. I smelled the soup when i opened it and thought, 'oh, no, i don't think i'm going to like this'. but, after i heated it up, i found i liked it. pleasant surprise!

The first time I had it I really didn't like it, it seemed SO bland. Now I simply add lots of cracked black pepper and it's one of my favorite JC lunches! I bet we could come up with some ways to make it really super with free veggies, maybe tobasco...hmmm...

ok so i did some recipe googling...and next time I'm adding some fresh thyme & sage and broccoli (chopped tiny) :)

I have had two of these in my pantry for a LONG time and never tried it...maybe I will give a try this week....MAYBE. :-)

I also found this chowder (Actually, both chowders) really boring and bland. But it seems the key is spicing it up a bit! I like the idea of adding bits of broccoli... I might have to give this a second chance!

I always use this as a 'base' for my free veggies. I roast peppers and onion (and sometimes turnips) in the oven and add them to the soup, along with garlic and cracked pepper. If I want something less filling (or if I don't feel like taking time to roast veggies), I'll just add a few splashes of lemon juice, some fresh garlic, dehydrated onion and rosemary.

OH! Sometimes I'll even thin it out by using my milk serving from breakfast (since I'm not a milk-drinker). It doubles the size and I can season it to taste and sip on it all day long. It's one of my favorite lunches because it's so versatile.

I had this for lunch today, and I was pleasantly surprised! I didn't jazz it up at all, and it was a little bland, but it was thick and satisfying. Definitely going to try adding pepper and broccoli next time!

I enjoy the soups but I'm a soupy kind of gal :P
I have yet to "jazz" up anything but how I eat my veggies, so I'm going to have to try it out!

OK so last night I had my first chicken/corn chowder in a while (mixed up lunch and dinner yesterday). I cut up broccoli, sprtized it with olive oil (I use a Misto), and roasted it with a little fresh thyme sprinkled on it. I let it cool a bit and chopped it pretty fine...it had a great dry, crispy texture! Added it to the chowder - it was delicious!!!

I love this soup! (I've had it twice and dress it up with red pepper flakes. I like spicy food. I like the ideas about using it as a base for other recipes.) Just headed into my 3rd week and had the funniest experience yesterday. Only YOU will be able to relate:

Was microwaving the can. I know that 'pops' and noises are normal because it says that on the can, however, the POP was so violent that it knocked the can on its side sending the contents all over the floor of my microwave. I was REALLY hungry and hollered out, "OH NO!!!!!) When there is precious food wasted and I'm hungry I get very cranky! I scooped up the spilled contents and literally licked the microwave plate that was covered with soup.

I'm enjoying most of the food and am pleasantly surprised at the variety that I *get* to enjoy. Carry on folks!

Tangier, I had the same thing happen with the zesty tortellini! I know now the stop it every so often.......ya, I was upset too, I was hungry, lol

I have been heating the soups in a microwavable dish! Have had the microwave "explosion" happen too many times!! : )

OK I was relucant to try this but after trying it once this week, it will be a regular choice for me. Had this with a side salad and was totally satisfied. Thank you for steering me to this meal. I wouldn't have choosen it if you didn't mention. I am also a a fan of the Beef and Barley Stew. :D
