Growing up in Arizona and being in the Phoenix area, you can't 10 blocks without finding a mexican restaurant. Without counting Taco Bell or Del Taco, I can think of 7 within a 5 mile radius of me, one of which I used to eat at 1-3 times a week.
I grew up hispanic and so I know all the classics to make myself from the ever time consuming tamales for Christmas to enchiladas to red chile shedded beef burros (yes all from scratch). Not having anything close "real" mexican food has been the most difficult part of these past 3 weeks. If I crave anything at any time, it isn't cake, it isn't fried chicken, and it isn't pizza. Mainly this is due to the fact that they have something like every one of those in the jenny menu. No, I want a taco.
But there is hope in my area and maybe yours. In the dining out guide there is a restaurant called Rubio's. It is a chain so sometimes one is great while another not so much. But if you find one that does it right, hit them up for lunch and order 2 Chicken Street Tacos with the Guacamole on the side. It meets the 2 meat, 1 starch for Lunch Meal on my Own, by getting the Guac on the side you can add a small amt to cover the 1 fat that you need and the Salsa bar is Amazing. I typically take my salad with me so that I get that. And if you want a true hispanic side dish that will help you meet the 1 vegetable requirement (because honestly who is gonna eat a cup of salsa without chips), take 1 cup of cucumber sliced, squeeze on lime juice (you can get limes there at salsa bar) and depending on your taste buds and needs, add on a small amt of salt (I use Morton's Lite Salt).
It gives me that "I ate a taco" feeling without going outside of the JC program requirements.
I would love to have more Mexican choices that I didn't have to go hunt on my own and hope they get the idea from this. Yet if not, at least I have a back up for those I gotta have something Mexican times.
