HELP! Stuck in a rut. :(

:/ Hi, I'm Stevie and I've been doing Jenny since July. I had a personal trainer from May to the end of June when I decided to make the switch considering my dad had lost a substantial amount of weight on Jenny.

But as things go, the thirty pounds I lost has been making its way back because I get really bored with the Jenny food. And that's because I find the food, having come from a situation where I was the one making all the food in the house (like..cupcakes for breakfast. X.x), to making absolutely nothing.

For a while, I was supplementing my diet with vast amounts of zucchini which was very filling and gratifying, but now that it's January, almost February, I'm really stuck.

I eat the Breakfast Scramble for Breakfast, and the Ziti for lunch and dinner. Because I literally like nothing else from the Jenny menu. I used to eat the Smores snack bar, but after about 100 of them or so, I got really tired of eating them every day. I got the cookbook to make recipes, but I found that the only thing I was interested in was dessert. :3 And then I was making dessert every day for a snack and things got out of hand. Too much of a good thing can be a bad, let me tell you!

So now, since I don't eat dairy (blegh), I am trying to do the 'meal on my own' for a dinner (or lunch!) to supplement my diet with a little difference in my menu. Because of my lack of dairy, I can have extra chicken. Which I've been putting completely as an addition to my dinner.

At night, I've been making variations of vegetables with chicken--stewing tomatoes, zucchini, mushrooms, onions, etc, with chicken and a little bit of olive oil. I've fried some multigrain noodles with the chicken and the veggie medley. We eat broccoli with almost every meal. Last night, I smashed the chicken flat, patted it with a little salt and flour mixture and put it in the pan to cook then sprinkled some lemon. It was really good, but I don't think I can make it OR eat it every day for the rest of this diet. (Or my life.)

So what I need, basically, are ideas or recipes for chicken meals for dinner. Because I'm slowly becoming discouraged with the lack of variety in my diet and I really don't want to gain weight any more. I'm 22 and 252 pounds. I drink almost 3 liters of water a day. I'm converting the sunroom into a workout room (slowly), but if I have to eat any more ziti, I'm going to scream.

Help me out of my rut!! But before you recommend all kinds of vegetables--I don't eat beans or peas. Thank you!!

I am one that LOVES chicken - and you can make it so many ways.

Think of different ethnic food spices - you can make it "mexican" with salsa or any type of southwest spices.
I happen to love chicken with garlic, rosemary and sundried tomatoes.
How about a morrocan flavor - cumin and coriander work well here.

Aside from chicken - do you like turkey? You can have turkey burgers as a nice alternative. If you like fish (I don't but my husband does) how about some salmon steaks - you can get frozen ones at Sam's club or your grocery.

For veggies - I love zucchini and usually have it grilled, but here are some other veggies to try:
Winter squashes - acorn, butternut, and spagetti squash are all very filling.
Spinach sauted with garlic.
Eggplant - grilled or broiled
Carrot fries - there is a recipe for these somewhere on these boards.

I feel your pain....I despise vegetables of any kind. Even corn...I know, I'm strange. So I am limited in what I can volumize or add to meals. Hate onions and mushrooms too. I live on JC spaghetti and meatballs, meatloaf and well, that. lol.....I am so sick of the lunches, I only eat the turkey burger and beef slider ( I hide the peppers under ketchup, mustard and relish) I do like the breakfasts and only order the cookies and cream cheese cake for dessert. I am now down 46 pounds and need to lose about 20 more, so it's going very slow now. I do sub JC meals with Lean Cuisine and Weight watchers just for variety and to save money. I have started eating turkey sandwiches, cereal in am, peanut butter toast. I agree with the bordem of JC foods at times.

Hi! Sorry you're going through all of this and it's sort of understandable considering your limited menu.

However, if you're willing to at least TRY a couple of different dishes - with variations - you likely will find the variety you desire so much.

Two of our more successful JCers came up with some great recipes for volumizing AND making the meals different (and very tasty) so you might want to check out their links.

Cindy - you might try some of the higher calorie/higher protein breakfasts for lunch or dinner. I've heard others do that. When I was a kid, we used to have french toast night...french toast for dinner - yum!

Thank you guys so much! I'm going to look into your suggestions and continue to work with the chicken. (You're right, there's A TON to be done with chicken. We find that smashing it flat with a little cornmeal and some lemon makes it a 'bigger' portion and a bigger taste, too.)

I will definitely be back. I did not expect such a great response so quickly. Thank you again!

try www.allrecipes.com you can input ingredients you have at home and it gives you tons of options!

I love grilled eggplant and if have leftover roast chicken put it on top and if you off dairy you can use pizza sauce with soy cheese (it melts)!! Try different soy cheese as they taste different.

I also do this with portobello mushrooms which have a meatier taste
