broccoli potato soup

I've looked and not found this cuz I thought for sure someone would have tried this. Has anyone tried to turn their broccoli potato into soup? I thought by adding some broth and using the blender or food processor might get something pretty good. A good change up atleast. I know I've seen recipes on the internet for turning leftover baked potatos into soup and this is the same thing. Anyway, if you've tried it let me know.

I didnt want to eat that extra dessert. My "Dark Passenger" made me do it.

I like the potato to much on it's own to bother turning it into a soup! It's one of my favorites I still buy them even though I've been on maintenance for months. Yum

That is true. They are very good. I just thought that it might also stretch it out. My husband has a "hearty" appetite and I have been looking for new ways to bulk up the food. Like I said, I've been adding brocolli but thats the only idea I have. If anyone has any other ideas I am open to them because I like the potato. I just need to do something more for him.

If you have a recipe that uses baked potatoes, I would definitely try that with the right modifications.

In addition to broccoli, I like to add salsa and NF or LF sour cream to mine - some times tomatoes and onion too. I used to get the Wendy's baked potatoes and a small chili and dump it on top. When I add the salsa, etc it reminds me of that. I hope that helps.

Yes I have done this! Its very good. You can add extra broccoli or cauliflower to make it more like a thick soup. A low sodium bouillon- add until you get to the consistency you like. I add some low fat cottage cheese to mine as well. So good!
