Southwest Chicken and Rice Stuffed Pepper

I love this dish: Cut a poblano, green, red, orange or yellow pepper in half. (I prefer the poblano pepper) Remove seeds. Stuff each half with JC SW Chicken and rice, top with chopped onion and your favorite salsa (red or green). Cover and bake at 350 degrees for about 30 minutes.

Nice! Do i cook the chicken and rice first, or put it in the pepper frozen?

No, just stuff the pepper with what is in the package. This is not a frozen meal. It is one of the lunches.

OMG... I think id really like this since my favorite meal of all times is chili rellenos.

Yum,this sounds good! I have stuffed the southwest chkn & rice in a red pepper before and loved it...but,your idea of the onions & salsa on top makes it sound even better! Thank you! :)

This meal is so good. I add a little fat free cheddar cheese and fat free sour cream. Will definitely add the onion and salsa next time. Thanks for posting.

I tried this with the breakfast scramble as well yesterday. It was just as good.
