Cornmeal crusted catfish

Cornmeal crusted catfish
3 slices bacon
1/3 cup yellow cornmeal
2 tsp Cajun seasoning
4(6 oz) catfish fillets
Cook bacon in nonstick skillet over medium heat until crisp. Remove bacon and reserve 2 tsp drippings in pan. Use bacon for other purposes. Combine cornmeal and Cajun seasoning. Dredge fish in mixture. Heat bacon drippings over med-high heat. Add fish and cook 5 minutes on each side or until it flakes easily with fork. Serves 4.

Way to go....
I have never had catfish but I will watch for it in the markets. Might be able to sub flounder or cod for the catfish?
I just reached halfway point so looking for meals that I can make and freeze portions. I could make one fresh meal and three frozen meals.

I love catfish and this sounds delicious. I just copied the recipe and will definitely try it soon. Thx.
