Cornmeal crusted catfish

Now that I'm at halfway I'm cooking my own meals on the weekends. This is from a cooking light cookbook and even my kids loved it.

Cornmeal crusted catfish

3 slices bacon
1/3 cup yellow cornmeal
2 tsp Cajun seasoning
4(6 oz) catfish fillets

Cook bacon in nonstick skillet over medium heat until crisp. Remove bacon and reserve 2 tsp drippings in pan. Use bacon for other purposes. Combine cornmeal and Cajun seasoning. Dredge fish in mixture. Heat bacon drippings over med-high heat. Add fish and cook 5 minutes on each side or until it flakes easily with fork. Serves 4.

277 calories
Fat 13.7g, protein 27.5g, carb 8.9g, fiber 0.9g, chol 93mg, iron 1.6mg, sodium 412mg, calc 13mg

Had this with green beans...so good!!!

People think you have to eat artifical sweetners and nonfat things for the rest of your life to keep the weight off. You just proved how to have something that could be too high calorie but by adjusting some things and keeping portion control in check that you can make tasty meals that all will enjoy!!!

Way to go....

I have never had catfish but I will watch for it in the markets. Might be able to sub flounder or cod for the catfish?
I just reached halfway point so looking for meals that I can make and freeze portions. I could make one fresh meal and three frozen meals.

Wish I had this recipe yesterday. I made catfish last night and your recipe sounds MUCH tastier. :)
