I spend many of my weekends away from a kitchen (aka hiking) and would love to have a portable JC option for lunch. Any thoughts about a meal replacement bar for those of us that don't have access to refrigeration/microwave? :)

There are several "kits" available that are definitely an option. There's chicken salad and tuna salad mixed and comes in a can along with crackers and a fruit cup and even a fork so that would fit into your backpack easily. There also may be others that I'm not familiar with but those two would work.

Happy hiking! :)

I really like the Hawaiian Chicken Kit when I am traveling.
Chicken salad, crackers & pineapple fruit cup.

Thank you Phyllis and AnnLouise. I thought about the kits as soon as I posted. They aren't my favorite - maybe I am eating them wrong. I've been mixing in the tuna/chicken with my green salad, then eating the crackers & fruit by themselves. How do y'all dress them up?

I top the chicken/tuna on the cracker and eat it that way. I like the smoothness and the crunch together plus it makes it seem more like a "sinful" dip for the cracker. ;)

With the Hawaiian chicken salad, I mix in the pineapple into the salad and when I can, I mix apples into the chicken salad (which you might have a harder time doing on the trail but it helps the flavor of it and texture if you're somewhere where it's easier to do).
