portobello mushrooms

I absolutely love these grilled with balsamic vinegar and some spices or Mrs Dash!!! I can eat them all day! any other ideas on how to prepare them?

Mandy, I put mushrooms (portobello, mushrooms, shitake or whatever's on sale) into all of the pasta dishes. I also like eating them as a snack.

I bake mine at 425-450 with a LITTLE olive oil (olive oil spray would work too), some sea salt, garlic, and crushed red pepper. I cook them for 15-20 minutes until they get a little "crunchy." That's what I eat for snacks.

I make them a little softer if I'm going to add them to any of the entrees.

There's a great recipe in the Creative book where you stuff a portabello mushroom cap with the tuna or chicken salad and bake it. It's delicious.

I add mushrooms to all of my pasta dishes, too. :)
The stuffed mushroom recipe sounds delicious, I want to try that!

grill the mushroom and put it on a low calorie hamburger bun with lettuces tomato and onion and if available a piece of cheese...makes a great lunch burger

Here is my favorite (trust me you'll thank me later)
grill your mushroom (stem out)
add pizza sauce, onions, peppers, one tomato, 2 tablespoon of low fat cheddar (or feta) grill again

it's sooooooooo delicious free + one dairy

I stuff them and throw them on the grill. Usually with some beans (for protein, lite cheese, a little corn and salsa to give a tex-mex flavor.

Love portabello mushrooms. I slice them cross-wise, place them in a shallow dish and drizzle with low sodium soy sauce. While mushrooms are soaking up the soy sauce, I saute a little onion in butter flavored Pam until transluscent. Add a clove of garlic, minced, and the mushrooms. Saute until mushrooms get soft and just starting to brown. Yummy!!
