In reality, you're probably losing 1-2 lbs a week (after the first week when you'll see the biggest loss). The difference is that it's possible you're actually retaining water on your low-loss weeks and when you're not, that's why you're seeing the bigger numbers.
Try to make sure you drink as much water as possible the day before your weigh-in so that you're not retaining water and stay away from any of the "cheesy" dishes that JC has on the day before WI. I find I retain more water on the things like the fettucine or carbonara than with other meals.
As long as the scale is consistently going down, I wouldn't worry about the weekly differences. It sounds like you're doing great so far. Keep up the good work!
