I am loving cauliflower more than ever since I learned how to roast it. If you love to try different things take a head of cauliflower wash it then slice it (not too thin). Sprinkle Mrs. Dash seasoning on it then spray canola oil over the top. I spread it out in a 9X13 pan in a single layer, cook for 30 min on 350. Lucky for me that my hubby doesn't like it then I get to eat it all!

I thought cauliflower was something that you decorated with pretty ornaments around Christmas time.

Oh, try this too. It's an awesome substitute for mashed potatoes:

Ingredients

* 1 medium head cauliflower
* 1 tablespoon fat free cream cheese
* 1/4 cup grated Parmesan
* 1/2 teaspoon minced garlic
* 1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
* 1/8 teaspoon freshly ground black pepper
* 1/2 teaspoon chopped fresh or dry chives, for garnish

Directions

Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.

Garnish with chives.

Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

I forgot about roasted cauliflower -- and I agree with the cauliflower mashed "potatoes" - it's a really good substitute!

What flavo Mrs. Dash did you use? There seem to be a lot of different ones out there and I want to try your suggestions.

Try adding fresh minced garlic half way through and toss occassionally so the garlic doesn't burn (especially with a little amount of fat). I do this with a chopped head of cauliflower and some olive oil at 400 degrees.

Never gave cauliflower a second glance, until I joined Jenny and was running out of veggie ideas. I haven't tried roasting it, but I do enjoy it, simply steamed or under any one of JC entrees. I buy fresh and also frozen cauliflower. Amazing to me how very enjoyable and good tasting veggies are to me, now. Will try to roast it, as it sounds like a favorite around the forum.
