Cheese Enchiladas

The cheese enchiladas are horrible! Tasted like cardboard with Elmer's glue on top and then had painful gas all day. Being from Texas - this is not a good first impression for Mexican cuisine. Weight Watchers have a better entree.

Know what! This was one of my favorite things... Then about three months ago - it changed... didn't taste the same. Agree - the elmers glue thing. Blick! The mexicali rice is the only saving grace here.

And I thought they changed it for the better - in regard to the "cheese sauce." I put a big dollop of fresh salsa on, always, though and it's one of my favorite lunches.

I'm so glad I didn't try it. I was supposed to have it for lunch on Saturday and was going to my CARE appointment anyway (this is my 1st week) so I brought it with me and exchanged it for the Cheesy potatoes and chicken. That was really good..reminded me of the KFC bowl!! YUM!

Aww man this is one of my favorites too. I add taco bell sauce packet (mild) to it and it is great. I do have a hard time finding a good cooking time for it but love this and my fajitas.

It really isn't bad tasting at all. Just a bit mushy. Hopefully, JC will come out with a new Mexican dish. Hopefully!! laugh.gif They are doing great, lately, with the newer selections, for sure!

LOL, this is one of my favorites too! But I have to TOTALLY doctor it up with a quite generous portion of Salsa on top. I couldn't imagine eating without it.

And I too am from Texas - San Antonio to be exact. We know enchiladas here.
I just tell myself this isn't a real enchilada!

Oh I LOVE this dish.. I take mine out of freezer an hour ahead, then I put it in a skillet..gives it a tiny bit more crisp and I can add some veggies smile.gif It's definitely no Taco Bell or authentic mexican dish but it is good smile.gif

Ohh great tip, I love mexican food and was SO disappointed the first time I had this enchilada. I was going to give it another chance one of these days and see how it would do on the second round - I really want to like it!! tongue.gif

It's not great, but it is one of my favorite lunches. I cover mine with some salsa verde. Otherwise I cook it in the microwave. spray some pam cooking spray in a hot skillet and toast if for a bit, Kind of like a chilaquila.

Adding the salsa does make a difference -- while it is not the best, it is certainly not the worst. another trick is to heat it to the minimum - overcooking dries it out ----yuck!! blink.gif

I made myself a salad of lettuce, peppers and mushrooms and then added a fat free sour cream & salsa dressing to it. Also added a little shredded Mexican Cheese to salad. Once the Chesse Enchiladas were cooked from Microwave I added it over my salad and it was yummy. Made a nice size meal with the free veggies. I also love Mexican food so glad to have this as a lunch option when I crave Mexican.

Hey I do that too! I have a drawer full of taco bell sauce.. LOL I love the Cheesy Enchilada!!

This is one of my favorites too. I will request whenever I need to switch something out. Maybe check your cooking time.

I'm new to JC, started Sunday. I just tried the cheese enchiladas today and wasn't too impressed. I ate the contents out of the tortilla and a bit of the rice and tortilla itself. Passed on the "cheese?" sauce. I can see why doctoring it up would help immensly.

I also have yet to make anything in the microwave. So far I'm only using my toaster oven. I had the pasta marinara entree last night cooked that was and liked it. I just set the frozen dinner in a tin foil boat I make and then set it on the tiny cookie sheet that came with my toaster.

Something else I am finding is their suggested cooking times are way off. At least for me and my taste. I use way less time than suggested and then check often.
