I'm going into my third week, so so far I haven't found myself getting bored. The problem is, I'm not just a vegetarian, I'm a picky vegetarian, so I've already cut out the cheese ravioli, pasta fagioli and the zesty tortellini soup (it has rennet in it), which is limiting some of my options. I think the best way I've found to make me excited about certain meals is adding spices (or salsa or hot sauce) here and there or maybe some low fat cheese if I have a milk serving left, or just adding different yummy vegetables to each meal. A splash of lime juice can also make meals a little more exciting.
I imagine there are some vegetarians who've been around a little longer who might have better experience.

You don't drown by falling in the water. You drown by staying there.

Thank you so much! That helps. I'm with you on the picky thing. The more I work on staying away from animal products, I find myself more suited to the vegan lifestyle, which I know will have to wait for the most part once I am in maintenance. I thought that once I get to the meals on my own stage, then I can really work on the vegetarian/vegan thing. But it's nice to know that I can figure out ways to not eat the rennet, gelatin, etc., and still not get bored. I'll just have to be more creative.

I agree with Jenn83, use your veggies and unlimited items to spice stuff up a bit and create your own variety.

To speak to the vegan question, there is an awesome new non dairy cheese on the market. It's called Daiya. It is awesome. In the past non dairy cheese was aweful beyond words. This is not. I don't know how it would fit in Jenny Craig's plan, just sayin it's there.

Even though I am a returning client, this is the first time I'm attempting JC as a vegetarian. I know there aren't many food choices. Is there anyone out there with good tips on how to make the JC plan work for a vegetarian without getting bored? Thanks!
