Ever since I joined JC I had been looking for a filling food I could volumize with and use as a free food whenever I get hungry. And I think I found what I am looking for in cucumbers. There is something about that combination of the fiber in the stiff skin and the water inside the cucumber that really fills me up.

Ya I was just eating them sliced or chopped. But I know that is kind of bland.

I am thinking of spraying a little of one of those low cal spray on dressings on the cumcumbers.

Drinking water also makes me fuller. But it takes up to 3 glasses after a meal.

I would have almost gotten my stomach stapled if I wasn't a size 16 trying to get to a size 12. Doesn't seem worth it.

I like them with vinegar and onions, but plain as well. I've tried the salad sprays also - works great.


PS - The stapling only works if you can "fix" your lifestyle to go with it because I know plenty of people who "cheated" the pouch or stretched it out altogether. This way is so much better all the way around - no surgery or post-op risks and learning how to live healthier. Keep up the great work!

I know salt is not the best thing, but I love cucumbers and tomatoes sprinkled with salt and pepper. Or just thinly sliced with a mandolin and some oliveoil and vinegar dressing... yum... will have it tomorrow for lunch!

love the cukes as well!! mom used to grow them and we often ate with onions and red cider vinegar

now i like to change up the vinegar- red wine, or terragon or rice vinegars can add a nice change

i love olive oil but have been very sparing in using it since it has like 7 fat g per tablespoon, and that's as much as any JC entree in itself.... maybe when i've gotten closer to goal will feel i can incorporate it more, cause i do miss it!

I love the cuks/onion in vinegar! My granddad use to make them all the time for a side at dinner. I totally forgot about it. I love cuks anyway. I think I will grow some in my garden this year. Thanks for the idea!

I like cukes sliced with tomatoes and a little sea salt sprinkled on them. It is so delish. My daughter and I LOVE cukes.

One of my favorite ways to eat cucumbers:

Peel and slice cucumbers and place in bowl. Add the juice of one lime or lemon. Sprinkle on cayenne pepper, then salt. Mix and enjoy.


Also, there's this, a Greek treat:

For a vinagrette, mix 1 tbsp red wine vinegar and juice from half a lemon. Add 2 tbsp extra virgin olive oil. Add a tsp of dried oregano and mix.

Pour over sliced tomatoes and cucumbers. So yummy!

Thanks for reminding me of cucumbers.. I just restarted Jenny after a break from it and I am on day 5 and already tired of salad..salad..salad..and carrots ... celery... I could barely force myself to eat my salad yesterday! Lol.. I really have to go to the store and get some more choices! And I love cucumbers

They are good with Lemon Juice and a sprinkle of poppy seeds on top. Yum

I just keep them with me whole and eat into them like an apple whenever I need them. I LOVE THEM!!!!

I love the English cucumbers that can be washed and eaten whole. Costco even has a big of small English cucumbers now and then. I love the crunch and water!!

At a produce stand near me they sell bags of little cucumbers, and call them Persian Cucumbers - they are fantastic! I wonder if they are really just baby English cukes like NanaKate mentioned from Costco?

Several posters mentioned cucumbers and onions and vinegar - I have never had that - what do you do, just slice up any kind of onion as well as cukes? Or is it only certain kinds of onions? And do you eat the onions raw? Please share this old fashioned side dish with me, thanks
