Broccoli and cheese potato

I'm not a big fan of the broccoli and cheese potato. Does anybody doctor it up or volumize it in any way?  I'm up for any ideas for it.  TIA

I heat up a single serving of broccoli and cheese and pour it over. I know its not fancy but I don't care too much for the broccoli and cheese portion of the Jenny one.

Yes! One of my new favorite lunches I have found is the broccoli and cheese potato that I add one cup of the V8 boxed tomato soup. It is so delicious with the big chunks of potato and the cheese. I just randombly tried it the other day when I needed more veggies to volumize and loved it and 1 cup of the soup is only 80 calories.

I add sea salt and a decent amount of Mrs. Dash.  I think it's good that way--not every week, but it's pretty good.

I scoop out the filling and make it into broccoli-potato soup with skim milk. Then I use some of my limited free foods calories, and slice the "shell" into tater skins. I have them as an afternoon snack with a little greek yogurt (part of my milk) and use the limited free calories to add a little grated cheese and salad-topper bacon crumbles.

Oooh that sounds so yummy!  I'm not much of a cook, so can you please tell me how you make the soup?

Just mix the stuffing from the potato with 1/2 cup milk (or as much milk as it takes for the consistency you like). Season with pepper, a tiny amount of chicken or ham Better Than Bouillon, and onion powder. You can also use roasted garlic to season it.

i actually have added some salsa to the top of the broccoli and cheese potato....i know it sounds strange but it def. spruced it up and tasted good to me....

HERE IS WHAT I DO.   I STEAM ONIONS LOTS OF THEM MORE BROCOLLI AND ADD SPICES AND SEA SALT (LOVE THE SEA SALT BUT NOT THE COURSE) ANYWAY I ADD SO MANY YOU CANT SEE THE POOR TATER UNDER IT ALL, I AM STUFFED AT EVERY MEAL!
