vegetable minestrone soupitizer

i love the vegetable minestrone soupitizer! does anyone have a recipe similar to this that i can make on my own? the texture is more brothy instead of heavily tomato based..it feels light and its very filling!!

I'm on my first week and I quickly discovered the value of the soup portion since I am starving at night. I didn't buy the soupitizers (cutting costs) so I just made my own. I added pre-cut veggies from Trader Joes, Low sodium chicken stock, 2 cubes of garlic (frozen ones from Trader Joes) and some random spices (oregano and thyme), a splash of salt and pepper. It took me seconds to make and it was great. Super garlicky but it that's how I like it.
