Need Recipes for Jenny's Lentils with Beef

Does anyone have a recipe (or volumizing tips) for enhancing the Lentils with Beef?

For both the Lentils and Beef and the chili meals, I have cooked up some spaghetti squash and then topped them with the JC meal. A also like to add some Reduced Fat Parmesan Cheese to this. Since spaghetti squash is considered a free vegetable, you can have a huge bowl of this and it really fills you up.

This is really yummy!

I like to add some sauteed onion, a little garlic, ginger, chopped up chilis, and tomato, then add a little graham masala for a taste of India.

Or if I'm lazy, just a spoonful of FF sour cream.

I microwave a package of Califlower & mix it in with the Lentil & beef and add lots of curry powder.

When I think of lentils I think of Indiain food; but beef just doesn't go with it. Cows are sacred in India. What was JC thinking? Go figure.

BTW with veggies instead of beef it would be a great vegitrain meal.

This is from JC "Creative Recipes" cookbook....Lentils al greco
2 tsps squeezed lemon juice
1/8 tsp choped garlic
1/8 tsp greek seasoning
1 Tbl crumbled reduced fat feta cheese
Heat the lentils according to directions, stir in all but cheese, top with cheese
add 3 free and 1 limited free

LOVE THIS COOKBOOK! SHOWS YOU HOW TO KICKUP THE PACKAGED FOOD.

i cook up some zucchini and add that as well as pico salsa, it is great with salsa added to it!

This makes a great base for a tasty and hearty soup!

Finely chop about 1/4 of a medium onion. Saute in Pam, then add about 1/2c. beef broth, 1/2c. of matchstick carrots, and a 14oz can of diced tomatoes. Let it simmer for 5-10 minutes until the carrot softens. Add the lentils meal to the pot. Simmer for a few minutes to let the flavors blend.

My measurements aren't exact, so adjust the beef broth and carrots to suit your taste. I am looking forward to trying in with different veggies. YUM!

Shred and cook some green cabbage. Dump your lentils over the top.

This is one of my favorites. I buy lettuce shreds and top them with the cooked lentils and beef. Makes a large meal.

Some of my inlaws come from Iran/Pakastan/Ethiopia and are Catholic in religion (they were a minority in India). They do eat beef, chicken and other meats. I like to take a Tblsp or so of Patak's medium curry and saute about 1 onion and add a small, drained, can of garbanzo beans to the fry pan. Follow the directions on the jar (the curry spice has to be cooked). I then add the Lentil's with beef. It's usually enough for more than one meal. The garbanzo's are a meat/starch and the Patak's does have oil in it. I haven't figured out the exchanges. You can also add canned tomatoes. Just a different recipe idea!!

I love lentils and my dad used to put lots of carrots and a big onion in them when he cooked them from scratch. So, I roast cut up carrots and onions coated lightly with olive oil spray and then add them in. It really adds a lot of volume and flavor.
